I think there has been a fair amount of Haskell adoption due to Cardano. Modest but it exists.
Cardano is the most suitable platform for tokens because it uses a multi-asset ledger. All minted tokens are native. Cardano treats them similarly to ADA coins. There is no need to use a smart contract for minting and transferring.
